Galactoglucan is a polysaccharide consisting of alternating galactopyranosyl and glucopyranosyl units in which the R1 group on the glucose residue may be an acetyl group, and the R2 and R3 groups on the galactose residue may be a pyruvyl (carboxyethylidene) group.
